Cured and Smoked Hog Jowls

A favorite in Southern cuisine, cured and smoked hog jowls can be used to flavor a pot of beans as well as greens like collards. Smoked hog jowl can also be fried up just like bacon. Some people even prefer it over traditional bacon that is made from pork belly.

Description

Our pigs are raised in the woods on our homestead where they enjoy rooting for insects, roots and acorns. They have wallows for playtime and to cool down and shade to rest in. They receive scratches behind their ears and are told daily what good pigs they are. I treat them like pets and they are the most spoiled pigs you will ever meet. They are fed only non-GMO feed and live a life that allows them to “express their pigness” as Joel Salatin would say.
